Culinary Corner with Chef Morissa: Watermelon Mojito

Ingredients

Mint simple syrup:

  • 1/2 C. water
  • 1/2 C. sugar
  • Fresh mint, around 20 leaves

Watermelon puree:

  • 4 C. seedless watermelon, cubed

Mojitos:

  • 1 C. white rum
  • 2/3 C. lime juice
  • 2 C. watermelon puree
  • Mint simple syrup

Instructions

For simple syrup, add sugar, water and mint in a small pan. Boil until sugar is dissolved. Allow time to chill. For watermelon puree, blend or process watermelon cubes until smooth. Use a sieve to filter any solids and chill. Then mix rum, lime juice, puree and mint syrup (to taste) in a pitcher. Garnish with limes or mint leaves. Enjoy!
