INGREDIENTS
• 1 cup all-purpose flour, sifted
• 1 tsp. baking powder, sifted
• ½ tsp. salt
• 1 stick unsalted butter, room temperature
• 2/3 cup granulated sugar, plus more for sprinkling over cake
• 2 large eggs
• 1 tsp. vanilla extract
• 3 tbsp. dark rum
• 2 baking apples, peeled, cored and cut into ½ inch cubes
• Confectioners’ sugar for decorating cake
PREPARATION
Preheat the oven to 350 degrees and set an oven rack in the middle of the oven. Grease a 9-inch springform pan with nonstick spray. In a small bowl, whisk together the flour, baking powder and salt. Using a handheld mixer with beaters or stand mixer with paddle attachment, cream butter and sugar until fluffy. Add the eggs one at a time. Add vanilla and rum. Add flour mixture and mix on low speed until combined, then fold in chopped apples. Scrape batter in prepared pan. Sprinkle top with granulated sugar. Bake for 40 minutes, or until the cake is golden and toothpick inserted into the center comes out clean. Allow cake to cool on a rack. Dust confectioners’ sugar and serve with whipped cream or vanilla ice cream.
