Chef Morissa’s Watermelon Mint Popsicles

Ingredients:

  • 2 pounds seedless watermelon-diced without rind
  • 3 tbsp. Sugar
  • 1/4 cup mint leaves, minced
  • 3 tsp. Finely grated lemon zest
  • Pinch of salt In blender

Direction:

Puree watermelon and sugar until smooth. Stir in mint, lemon zest and salt. Pour into standard ice cube trays (insert popsicle sticks halfway through freezing) freeze for 3 hours until frozen. This is something fun and healthy!!
