Ingredients:
¼ cup unsalted butter
1 ¾ cups sugar
1/3 cup water
¾ tsp cinnamon
2 apples, cut and cured into eights
1 cup all-purpose flour
1 tsp baking powder
¼ tsp salt
3 egg yolks
2 eggs
2 tsp vanilla extract
1 stick butter, melted
Directions:
Preheat oven to 350. Butter 9-inch baking pan. Coat pan with sugar. Melt ¼ cup of butter in heavy skillet, stir in ¾ cup of sugar, water and cinnamon and bring to a boil. Add apples and cook until tender, mix frequently. Remove apples and arrange in the bottom of the baking pan. Continue to boil liquid until thickened and pour over apples.
Sift all dry ingredients and whisk remaining sugar, egg yolks, eggs and vanilla until blended. Gently stir in dry ingredients and fold ½ cup of melted butter. Pour batter over apples and bake for 45 minutes until toothpick comes out clean. Cool and flip cake out of pan and serve warm.
