Culinary Corner with Chef Morissa: Mexican Street Corn Salad

INGREDIENTS

• 5 ears of corn- shucked
• 2oz. Cotija cheese
• ½ cup finely sliced scallions
• ½ cup cilantro
• 2 jalapenos (remove seeds if you do not want spicy)- small dice
• 1 garlic clove- minced
• 2 tbsp. red onion- small dice
• 2 tbsp. red bell pepper -small dice
• 3 tbsp. mayonnaise
• 1 lime- juiced
• Chili powder to taste
• Cumin to taste
• Salt and pepper to taste

PREPARATION

Grill corn on hot grill. Once cool, remove kernels and place in a bowl. Add jalapeño, red onion, red pepper, garlic, cilantro and scallion. Mix lightly. In another bowl, add mayo, lime juice, chili powder, cumin, and salt and pepper. Taste and adjust seasonings. Add sauce to corn and mix until combined. Add cheese. Garnish with cilantro and more cheese.
