Chef Morissa’s Watermelon Mint Popsicles
- 2 pounds seedless watermelon-diced without rind
- 3 tbsp. Sugar
- 1/4 cup mint leaves, minced
- 3 tsp. Finely grated lemon zest
- Pinch of salt In blender
Puree watermelon and sugar until smooth. Stir in mint, lemon zest and salt. Pour into standard ice cube trays (insert popsicle sticks halfway through freezing) freeze for 3 hours until frozen. This is something fun and healthy!!
