Culinary Corner with Chef Morissa
WATERMELON FETA SALAD
8lbs. whole seedless watermelon, chilled and cubed
4 whole limes, juiced
¾ tsp. pepper
½ cup fresh mint, chopped
½ cup fresh basil, chopped
1 ½ cups feta crumbled
Note-This salad is best made just prior to serving.
Cut rind from watermelon and chop fruit into 1 inch chunks. Drain excess liquid. Place in a large bowl and add lime juice, salt, pepper, mint, basil and crumbled feta. Toss gently and serve immediately.
